Indication of the place of production of the goods (boundaries of the geographical object): Karaganda region, Bukhar-Zhyrau district, Botakara village The connection between the characteristics of the product and its place of origin (production): The history of poultry farming in the village of Botakara dates back to the 50s of the 20th century, when small farms were created in the villages nearby the city to improve the food supply of the mining capital, Karaganda. In Ulyanovsk (now Bukhar-Zhyrau) district of the Karaganda region, on the basis of a small progressively developing farm, a diversified agricultural enterprise was created, the structural unit of which became a poultry farm in the village of Botakara - breeding and commercial eggs, duck meat were produced. The active development of the poultry industry has begun - the district has become a pioneer of industrial poultry farming in the Karaganda region. In the 1960s, with the introduction of narrow specialization in agricultural enterprises, the Botakara poultry farm was singled out as an independent farm, which provided work for most of the villagers, and working dynasties of poultry farmers began to form. Botakarinskaya poultry farm preserved the continuity of production base, knowledge and experience of meat poultry farming of the district and region “as the top class of agricultural industry”, became for many years the only producer of broiler chicken meat in the Karaganda region. Description of the product characteristics: Broiler chicken meat is a poultry slaughter product produced in accordance with GOST 31962-2013 in the assortment: broiler chicken carcass (CB) of category 1, gutted; cutting products - half of the carcass, tobacco chicken, quarter of the rear carcass, breast, fillet, ham, wing, thigh, shin, a set of parts of the meat and bone soup carcass, a set of parts stew carcasses; offal - liver, heart, stomach, processed neck. The organoleptic characteristics of the "Aknar PF" broiler chicken according to the indicators: Fatness - the muscles of the carcass are well developed, the shape of the breast is rounded, the keel of the breast bone does not stand out; the deposition of subcutaneous fat in the lower abdomen is insignificant, the tail is with the coccygeal gland. The condition of the bone system is the keel of the thorax cartilaginous, easily flexible. It is allowed to have remnants of lungs, kidneys, and reproductive organs in the carcass. The thermal state of the product - t in the muscle thickness is not higher than - 12oC – frozen, -1 to 40C - cooled broiler chicken meat. The end of the technological process occurs at the stage of bringing the temperature in the muscle thickness to the required (no higher than - 12oC for frozen, -1 to +4oC for chilled meat) in refrigeration units adjacent to the slaughterhouse for packing and dispensing finished products. After reaching the required temperature, chilled products are not subject to storage at the enterprise and are shipped to the consumer for sale within the prescribed shelf life of 5 days. Frozen products are stored in refrigerating units at a temperature no higher than - 18oC. The shelf life for frozen products is 12 months. The actual data show that the maximum duration of storage of frozen products before its sale to retail outlets does not exceed 2 months. The refrigerating chambers are equipped with an automatic temperature monitoring system, along with a system of round-the-clock visual monitoring of the condition of the equipment by specialists. Consumer packaging - a plastic bag or tray (base) made of expanded polystyrene, food grade PVC film, label. Transport packaging – corrugated packaging. |
