There are five species of pikeperch, which have similar appearance and habits. Due to the excellent flavor of the meat, the fish is considered a very valuable object of commercial and amateur fishing. Pikeperch meat contains more than 18% protein and is a rich source of minerals such as manganese, phosphorus, molybdenum, iodine and potassium, as well as vitamins A, C, E, PP and B group. It has white and lean meat, which is appreciated for its delicate, slightly sweet taste, minimum bones and pleasant flavor. Sudaks come in freshwater and sea. Sea specimens are often larger. Both freshwater and marine fish are very sensitive to the concentration of oxygen in the water and the presence of suspended solids, so they are not found in swampy or dirty water bodies. Pikeperch fillet is a product caught in an ecologically safe region. Thanks to preservation by blast freezing the fish protects its rich flavor and useful properties. It is the only species that has traded fresh water for salt water. It is allowed to cut blocks of frozen fillets into smaller ones with their subsequent packing into consumer packaging. The size and weight of fillet blocks depend on the size and weight of pikeperch and the equipment used for their freezing. The temperature of frozen fillets or blocks should not exceed minus 18 °C. Frozen fillets are produced in glazed or unglazed form. Glaze should be in the form of ice crust, evenly covering the surface of frozen fillets or block, and should not fall off when lightly tapped. Mass fraction of glaze shall comply with the requirements of technical regulations, regulatory legal acts in force in the territory of the state that adopted the standard. Packaging Frozen fillets are packed in accordance with GOST 7630. Frozen fillets in consumer packaging are placed in corrugated cardboard boxes. It is allowed to put frozen fillets in consumer packaging in polymeric multi-turn boxes for realization in the places of production - according to normative documents, operating in the territory of the state, which adopted the standard. Polymeric multi-turn boxes must be closed with lids. When packing unglazed frozen fillets in uncoated cardboard packs fillets are pre-packed in plastic film bags. Blocks of frozen fillets before packing into crates shall be pre-packed in plastic film bags, film bags, polyethylene film, boxes, or wrapped in anti-adhesive or paraffinized paper, or covered with parchment or under parchment. Permitted: - to shift fillet blocks with wrapping paper according to GOST 8273; - to stack boxes with frozen fillet blocks in a crate using film liner bags. Storage and transportation conditions Frozen fillets are transported by all types of transport in accordance with the rules of transportation of perishable goods, operating on this type of transport, in compliance with the requirements to the temperature regime of its storage.
